The easiest ribs

These are the easiest and yummiest ribs I have ever made. You just season the ribs on both sides with salt, pepper and garlic salt then smear both sides with your favorite BBQ sauce and put them in the crockpot on low for 6-8 hours. I found this recipe on cooks.com and read the reviews and some of the reviewers recommended that about an hour before the ribs are done drain out the original BBQ sauce and cover the ribs with new BBQ sauce for more of a BBQ taste. These ribs were so darn good!!!!

German Chocolate Pie

This is my favorite pie of all time. I entered into a church pie contest and tied for 2nd place. Here is the recipe:

For Pie Filling:

1 small box of instant chocolate jell-o pudding
1 3/4 cups milk
1 -1/2 cups Pecan (estimate)
1 package sweetened coconut
1/2 pint whipping cream

Toast the coconut in the oven on broil watching and stirring often, chop the pecans into small pieces, whip up the whipping cream with beaters until it forms soft peaks, then mix the box of chocolate pudding according to the pie directions on the box. After the pudding is mixed add the coconut, pecans, and whipped cream all together and put in baked pie shell for a yummy dessert.

Sweet N Sour Chicken

4 -5 chicken breasts cut into squares
2 eggs or substitue
1 cup cornstarch (we have run out before and used flour which worked well, Curtis likes to add a touch of curry powder)
1/4 cup Olive Oil (or vegetable)
Dip chicken into egg, roll in cornstarch and cook in frying pan filled with oil. After cooking, put onto paper towel. Drain some oil.
In a sauce pan under low heat, mix the following ingredients;
1 cup Ketchup
2 cup Sugar (we prefer 1 3/4 cup, was too sweet for us)
1 tsp Garlic Powder
1 to 2 Tablespoon vinegar depending on your flavoring

Add sauce and chicken back into frying pan and let simmer for about 10 to 20 min.
You can also add pineapple, and peppers

Coca Cola Teriyaki Chicken Drumettes

Letish, here is the recipe I think you were talking about.

In ziploc bag combine 1/2 cup Teriyaki sauce, 1/4 cup flat coca cola (or Dr. Pepper and it doesn't have to be flat, 1 tsp minced garlic and chicken drumettes. Marinate for at least 4 hours or overnight. Bake at 400 degrees for 20-25 minutes then turn chicken over and bake another 4-5 minutes. In bowl combine 2-3 Tbsp Bullseye BBQ sauce,2-3 Tbsp hone, 1/4-1/2 tsp sesame oil. After the drumettes have been turned take them out of the oven and baste them on one side with the BBQ/honey mixture and bake additional 3-4 minutes then take them out and turn them baste them again on the other side and bake an additonal 3-4 minutes.

***Watch the cooking time as some ovens may cook faster or slower.

Bruschetta

There is a fabulous restaurant that I love so much in Phoenix called Postino's and they serve the best food. My favorite thing to order there is bruschetta. But because it takes about an hour one way just to get there we only get to visit Postino's on special occasions. So, with some fresh basil from our next door neighbors garden we decided to make our own bruschetta and it was so good. We made 4 different kinds and they were all so good.

Here is a list of the varities:

Proscuitto, Fig, and Brie cheese

Tomato, Basil, and Mozzarella

Apple, Brie, and Honey

Fig, Pistachio, and Brie

***We just drizzled some olive oil on the french bread and toasted it lightly on both sides then we took the ingredients and just put them on top. They were so good.

1/3 cup Brown Sugar
1/2 cup ketchup

Fruit Triffle

1 can sweetened condensed milk (You can by the fat free stuff and it still tastes fine)
1 1/2 cup cold milk- combine and mix the two together in a bowl until smooth then add
1 large box of vanilla instant pudding mix (sugar free good)- mix well, it will set up like pudding.
Fold in 8oz of cool whip

Honey Lime Chicken Enchiladas - Yummy

This is a very different enchilada recipe but it is very good. Tony does not like enchiladas at all but he liked these. The only thing I would change about this recipe is put less chili powder in the recipe because I don't like food that spicy but it was still good.

Honey Lime Chicken Enchiladas
3/4 cup honey
Lime juice (1-2 limes)
1 tablespoon chili powder
1/2 teaspoon garlic powder
1 teaspoon cumin
1 pound chicken, cooked and shredded (or chicken breast/tender)
8-10 flour tortillas
1 pound monterey jack cheese, shredded
16 ounces green enchilada sauce
1 cup heavy cream
Mix the first five ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour (I tossed mine together in a ziploc bag in the morning and let it sit in the refrigerator all day). Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top

Zucchini muffins (Paula Dean's Recipe)

I had zucchini from my garden and decided to make zucchini muffins. So, I got on the food network website and found this recipe for zucchini bread that had really good reviews ( I just reduced the cooking time and put the batter into muffin tins). They are really yummy!!!! Here are some pictures of the batter and the finished product.

Recipe

Zucchini Bread Recipe courtesy Paula Deen

3 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs, beaten
1/3 cup water
2 cups grated zucchini
1 teaspoon lemon juice
1 cup chopped walnuts or pecans

Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes or muffin tins for 20 - 25 minutes or until brown on the top and done in the middle.
